If a I see 1 or 2 fish with signs of ich. Is it worth it to remove them and treat them with cooper in a QT. Would they just get ich again when they are returned to the display tank?

You should remove them both, treat them with copper, and leave the display without fish for 6-8 weeks keeping the treated fish in the hospital tank in the interim. Your fish and display will then be ich free.
