In planning for multiple large Temperate tanks, I would like to be able to use glass rather than acrylic if possible.

I have a thick acrylic temperate tank and even it sweats on the rare occasion so I would not be optimistic about glass. Where are you planning on getting your livestock-my source just closed their business.

The initial tanks include:
Several 2150g (12Lx6Wx4H), each with four 270g sumps (6Lx3Wx2H);
Several 720g (8Lx4Wx3H), each with two 240g sumps (8Lx2Wx2H).
I need some potential solutions for some of them to be temperate glass tanks, if at all possible.

When I contacted Jordan at among the reef he said he would be able to get temperate fish. So I would try him and see if he can find what you want.
Ask them about a double paned aquarium, I looked into that and it might be possible. Don't know how much it would cost though or if it would even work.
I kept my temperate tanks in my basement and outdoors, never had an issue with sweating.
But in à normal heated room acrilic or double glazing is needed. À few years ago read an article on adding a double pane on an existing tank. It came down to glueing a frame around the edges of the front pane, placing the extra window, fillng the void with à small amount of à drying agent and or replacing the air with à dry gas like nitrogen.

Sorry I don't know anything about temperate aquariums, but I was skimming through and noticed you mentioned House of Fins. Are you local to them? I'm about 15 minutes from their store.
No, not local to them. Wish I was, from what I've seen.
They're the only LFS that I go to. They do have a really cool deepwater/cold water display in their shop too. Maybe give them a call and see what they think about the tank sweating?
