Local Gulf aquarium

Hey guys,
Has anyone tried to do a "local" aquarium based off things that can be locally collected? I have a 210 reef and a spare 75 with stand and all just sitting empty in my living room. The girlfriend really wants seahorses and starfish. She enjoys the 210 but I'd like to get her to be more hands on so I'm thinking of setting up the 75 as a "Gulf Of Mexico" aquarium for her. Something simple with no corals, just sand and a few pieces of live rock with some seahorses, starfish, maybe a dwarf octo... any recommendations?

Thanks,
Eros
