Made decision on Lens

What you are experiencing is too small a depth of field. You will need to raise your f-stop to increase the DOF and get more of the coral in focus. the catch 22 of this is, your shutter speeds will have to go up as your f-stop goes up...because of this you will HAVE to use a tripod, and you can't get sharp pics of moving corals.
 
Okay, I will pull the manual out and play with the F-Stop and repost some new pics. Do you use A-DEP or M on the Mode dial?
 
I usually just use Aperture priority mode (Av), and let the camera choose the shudder speed...if the exposure is s little off, I'll fix that in Lightroom.
