How do I know if my mushroom coral is happy? With others it's easy to see polyps extended etc. I'm hoping the mushroom will spread but not sure how it does that.

Looks fine. If it likes your conditions, it shouldn't take too long before some new ones pop up. Nothing special you have to do, just give it time and stable conditions.

If they're happy they're usually laid out flat or draped over whatever they are on. When they're not happy they'll shrivel up and for lack of a better description just look crumby. Your rhodactis mushroom looks plenty happy to me.
