Depends what type of drainage system your using. If you're just using standard drains I would go 1.5" bulkheads.
 
If you are using a siphon type drain (herbie or beans style) you can easily run 2500gph through 1" drains if you have 2 of them. I set up a 210g with herbie method and it ran a dart pump wide open with no problem.
If you are using dursos and will have air mixed with the drain water then you need to add to the tubing size to allow for the extra volume so going to at least 1.5" drains would be best.

Hey Kevin, i have two 1" drains running herbie style and i have to throttle back the Dart. Could it be the teeth on the overflows? What kind of return plumbing did you have?
 
Mark the return plumbing was a length of 2" PVC split into two 1" SeaSwirls and three over-the-top 3/4" PVC returns.
The overflows were megaflows with the 1" drains and 3/4 returns used as emergency drains.
A lot of people have to cut out the teeth and insert gutter guard on their megaflows because they are restrictive.
 
The tank is a perfecto with corner overflows. I have 2" feeding the pump and come out of the pump with 1.5 to a union through a gatevalve. then a 1.5" true Y to twin 1.5" returns that drop into the tank. I'm thinking the teeth are the problem.
