Old Carbon

I have some really old carbon from like 15 years ago that I used for fresh water filtering. Does carbon ever go bad? Can I use it now?

It may already be depleted, but I don't think it would be specifically harmful.

If it was in a Air tight container and is still dark Black its fine Carbon ...

ok cool, and last newbie follow up question. why is it suggested to have filter floss before the carbon filter?

Filter the big particles first, save the carbon for the harder to filter stuff. Same reason air filters have a course filter first before the HEPA filter and your RODI system has a sediment filter before the carbon block.

Its not strictly necessary much of this comes down to preference. Do make sure to rinse the carbon in RODI or tank water that you are discarding so that you don't get carbon dust in the DT.
