Does it matter what kind of paint I use to paint the back of the tank? Does it need to be aquarium safe even if it is in the back of the tank?
Also, what color looks the best on the back of the tank?

I picked up matte black latex exterior paint from homedepot couple of days ago. I haven't applied it yet, but it should work fine.

Usually people choose between blue or black. It is an individual preference.

Most people use latex paint for the back, and it would't matter what type of paint, because the paint will not be submerge in water.

I've used "water colors" backgrounds to great success. You spray them with soapy water and then squeegee the air bubbles out. They go on far easier than you might think (similar to a screen protector on a phone). I cut them a little large, then use an exacto knife and straight edge to make them perfect.

Suggestion as an alternative to paint.

I'll probably paint it a dark blue.

Get flat exterior latex. It will cover the best for glass. As for color-depends on what your tank is holding, but black will give you the most pop. I did three sides to my 110G and used 1qt. Make sure to use a smooth roller. Took about 3-4 coats with about 15 minutes to dry between each one. If it is not rimless you will need to use a brush to get into the molding of the base and top or it will look sloppy when the lights are on and water is in it.
