I am setting up a 75gallon and am going with a beananimal overflow. The overflow box I have has 3 - 3/4 drains. I am not sure if having one of the 3/4 drains used for my full siphon will be enough flow. So, my question is will I get more flow if I use an adaptor from the bulkhead to use 1" plumbing, will it increase my flow at all, or is the 3/4 siphon enough flow?
 
It will be more than enough. You are not looking for flow as much as getting water to your sump. According to this calculator, if you have a 2' drop from your overflow to a submerged discharge in your sump, your 3/4" drain can handle over 900 gallons an hour. ReefKeeping Magazine and others recommend only 3-7x turnover through the sump so you would be shooting for 375 to 525 gph for your 75 gallon DT, Even at 10x, you would still be in the ballpark.
