I've heard it argued that a ground probe is necessary. I've also heard it argued that a ground probe creates the problem by completing the circuit as otherwise the stray voltage would do nothing. Some say a ground probe is only a benefit when plugged into a GFCI. What's your thoughts?

If you use one you need to be acutely aware of the dangers that it can create and how to properly protect yourself and you fish. In most case, the probe can create more harm than good (if certain steps are not taken).
Using a ground probe without GFCI protection on all of the submerged (or exposed) equipment creates a dangerous situation for the tank’s inhabitants and humans exposed to that tank. A ground probe must always be used with GFCI protection!
