If I buy a sump that is rated for a 60g tank, does the overflow and pump need to be rated for the same? For example, if I buy a CPR CR 500 (rated to 60g tanks with an overflow of 300gph) can I get the overflow and pump which would be rated for up to 125g tanks (overflow of 600gph)?

It is usually best to oversize!.. Get an overflow of 600 gph IMO
Calculate the head for your return pipping using calculator on RC
Match return pump accordingly. Do not over size pump or will exceed flow designed for overflow and pump your sump dry loosing prime and overflowing display tank.
