So this might be an obvious thing, but will ich eventually die off in a tank if the fish in the tank are immune? Or will it continue to feed off those fish?

I'm not aware of any fish being immune to ich, that being said only way to get rid of it in you main tank would be to remove all fishes for 72 days...

Ich will not die off in a tank unless there are no fish present (invertebrates and shrimp are okay) for at least 8-10 weeks. You will need to QT all of your fish. I treat mine with Seachem Paraguard and mix thawed frozen Mysis and plankton with Seachem Metroplex and Focus and feed 3 times per day which actually works really well and is much much much less harmful than copper and hyposalinity and less stressful than TTM. It is not talked about a lot because people think it doesn't work because it does take time for the medication to kill off all the newly hatched cysts. You will see ich even with treatment, but toward the middle or end of treatment you won't see the ich anymore and the full QT for medications should be 3 weeks, then the rest of the 8-10 weeks should be normal QT with good water conditions and a well rounded diet- I like to also soak my food in selcon (vitamin supplement) and aminomega from brightwell aquatics. It makes a difference in the health of the fish if you feed mostly frozen food, spirulina or spirulina brine shrimp, and algae versus pellets and flake food.

Agreed. For as I am aware of, ich does not die off. It will always be present in the tank as long as it is a host in the tank. Your fish could be ok, but if something happens like stress or something like that than they would be endanger of a break out.
