Anything small enough for the tank runs the risk of becoming a snack for the eel in the future.
You could look at:
Carpenter's flasher wrasse
Lubbock's fairy wrasse
Six-line
There are a bunch that will do well in a 75. I'd be concerned about the eel getting too large, adding too much bio load and snacking on the fish.
