I use photoshop cs2 to edit all my images and this is how I do it.

1 ) Open image and create a new layer
2 ) Layer > New Adjustment Layer > Hue/Saturation > click ok
3 ) Move the Hue and Saturation levels all the way to the left
4 ) Flip the colors so Black is over the white
5 ) Take the pain brush tool and paint over the image you want in color
 
hmm... I have arc soft photo studio 5.5. I can get to step 3, but after that I can't figure out how to flip so that the black is over the white... and step 5, well it was hard trying to match up just the right color off of the pallet, it just didn't look like the photo colors. Must be doing something wrong...
 
what i usually do is make a new layer, set it to B&W the same way andrew does, and with the eraser tool, i erase the B&W from the parts i want in color...this is how it turns out.....
