It depends on what you want to use it for. I think sched 40 is fine for all the pipes, etc. Sched 80 bulkheads are much better than their sched 40 counterparts, with thicker gaskets and sturdier fittings. If you are looking at bulkheads, keep in mind that the standard drilling in AGA tanks doesn't allow room for a sched 80 (the holes aren't big enough) so make sure the holes you have will accommodate the slightly larger diameter of the sched 80 bulkheads.
I'd say it is similar to people using 2x10's for tank stands... using heavier duty stuff might make you sleep a little better at night, but for most applications they cannot be considered "necessary." Or at least not necessary enough to bother drilling the tank out farther.
Also when you look at bigger you also have to look at smaller inside dimension now I do not know for a fact but in the large Tank threads there is some talk about using the real light stuff to lessen the resistance. Here is a link that compares the two.
