Sealing Off Bulkhead Hole

I have an acrylic sump with a hold about 2" up that I used to use for a return pump. This time, I will use an in-sump return pump and need to seal the hole. I picked up a new 1" bulkhead fitting that is threaded all around (both insides and the outside). It turns out the outside threads are between the sizes at Home Depot. I can just put together a 1" MPT x 3/4" slip, connector and cap and glue the PVC together but thought I would see if there is a better way to cap off a bulkhead fitting (are there closed/blind bulkhead fittings?).

Any thoughts?

you've got the right idea - a bulkhead and cap are your best bet. That way if you need it in the future it will be there for you.

Or if you don't really care how it looks - as long as it works, cut a small piece of acrylic and silicone it right over the hole. I've done it in sumps before - works well, just make sure the patch is on the inside of the sump and not on the outside.
