Skimming Wet vs. Dry

You can adjust the outlet tube on your skimmer to raise or lower the water level in the skimmer chamber. The outlet tube wide open will give a lower water level, producing a more concentrated, drier foam skim. Closing the outlet more will raise the level and generally give you a more diluted, less concentrated skim.

I skim fairly wet since I dose two part which tends to raise the salinity, skimming wet allows me to maintain a constant salinity level. In general you will remove a little more protein from the water skimming wet, but you may need to occasionally add saltwater to maintain your salinity if you do so.
