Just gonna come with searching the forum and picking out your favorites honestly. It's more environmental than anything though. Even the most exotic rare and colorful acros can look brown and ugly in the wrong conditions and vice versa, coming both from anecdotal evidence and personal experience.

Those are a few off the top of my head that I enjoy owning or hope to own.
Best advice I can give on finding fantastic colored sps are to browse your local reef club sale threads and just see what is available and pick up what you like. I grabbed Oregon tort, cali tort, and rainbow montipora having never even heard of them, but was floored at how amazing they looked in person that I had to buy them on the spot.
That's one way...another funny way (which won't give you many clever names, just a color, genus, and species) is browsing the Live Aquaria Divers Den sps page. Some of the most fantastic sps pieces I've seen have been on there oddly enough.
