Hi y'all,

It was a really wonderful meeting! I can't thank Mary Ruth and H@rry enough to put up with us rowdy bunch for so long. The food was so great and H@rry's tanks were so fabulous!! H@rry generously offered us beautiful frags, too. The time passed by so quickly and I really had a great time.

It was a wonderful meeting. So good to see you all again and talk reef. MaryRuth you out did yourself!!!! Mike wanted me to tell you that it was so sweet of you to think of him and making the pecans and sending them home . You made him feel good.
Harry your Tanks are a site to see!!!! Just beautiful! Thank You both so much for having us.

It was good to see some new faces too.

BeaselBob Thank You too for the Magnesium Chloride. I will start keeping some plastic coffee cans for you. That was so nice of you. I now have to get a test kit:)

Congratulations again to Will and Shannon!!!! I know you can't wait for the new little reefer :D I am so happy for you two.
 
i am sorry i came in on the tail end but your tanks are beautiful and congrats will and shannon i am so excited for you both. thanks to beaselbob for the ton of emails and all of the free stuff and to mariner for the xenia frag, to the couple from anniston nice to have met yall, and to tomoko for the daphnia and plant and to our genourous hopes.

Can you believe another 8Ball crawling around us? The baby will be guaranteed to be an awesome DIY reefer by age 5. I bet the baby's first toy will be the plastic tool set :D

Haha Tomoko boy or girl I'm sure the baby will end up with a toy work bench.. I was eyeballing them lastnight at toys R us;)

Thank you MaryRuth for such delicious food! I cannot wait to make the cheese/tomato roll and ditto Hard-Rock about the nuts!!!
 
Harry and I enjoyed hosting the Nov-Dec meeting. Thank you for the kind words about the food. Believe me it was my pleasure. Several of you asked for various recipes. I have to admit that I don't remember exactly who asked for which. The two that seemed most requested were the sun dried tomato cheese log and the spiced pecans. If anyone wants any of the other recipes please PM me and I'll be happy to share them with you. So here goes . .

Spiced Pecans

1 cup sugar
1 1/2 tablespoon ground cinnamon
1 teaspoon ground cloves (No more)
1 teaspoon salt
1 teaspoon ground ginger (Don't leave this out)
1/2 tsp ground nutmeg (Or maybe a bit more)
1 egg white
1 tablespoon cold water
1 pound mix of large pecan halves and almonds
Preheat oven to 250
Mix all dry ingredients
Beat egg white and cold water until frothy (not stiff peaks).
Add dry ingredient mixture and mix
Add nuts and stir to coat
Spread nuts onto buttered jelly roll or pizza pan.
Bake for 1 hour stirring every 15 to 20 minutes.
Remove from oven when dry and toasted.

Sun Dried Tomato Cheese Log

1 pound fresh (Baby) Mozzarella (This is a soft cheese - moist and sort of rubbery)
Fresh chopped or dry basil (I used dry - The moisture in the cheese will keep the dry basil from being crunchy)
Sun dried tomatos sliced or chopped (Next time I'll chop the tomatos because it makes the log easier to serve)

Put the cheese into a rectangular tray that will allow it to spread or you may need to 'encourage' it a bit; top with basil; add tomatos. (Because the cheese is a little bland I added a very light sprinkle of sea salt and VERY few red pepper flakes.) To "set" the cheese I put it into the frig for about an hour to cool. Roll into a log (jelly roll style). Roll log in basil and perhaps a VERY few red pepper flakes. Wrap and put in frig until about an hour before serving.

I saw a cheese log in one of the grocery stores that had a fresh basil leaf toped with a sun dried tomato decoration and decided to copy their presentation.
