My live rock use to be filled with tiny brittle stars. I haven't seen them lately. Could something in the tank be eating them?

I have:

(2) cleaner shrimp
cleaner goby
cleaner wrasse
purple tang
flame angel
(2) peppermint shrimp
(6) brittle stars
30 hermits scarlet/blue
30 snails
false percula

Well I think they mainly eat detritis or scavenge so if your tank is really clean could be a reason but doubt it.
I have them in 2 of my tanks. The only time I noticed them die was when I used flatworm exit. It wiped some out but some survived.
Have you used any chemicals on the tank?

Are you sure they are gone? Usually all you see is an arm here and there as they hide mainly in holes in the rock.

the flame angle might be the culprit. my coral beauty loves to eat them, luckly i have a fuge so i still have them in my system.
