Will topping off with R/O water everyday lower my Salinity Lvl?

Nope. Should keep it just the same, unless you are adding more than what evaporated. If you salinity level is dropping over time and you have a skimmer, I suspect that is what you are seeing.

imagine a glass of salt water. if you leave it out for a few weeks, all the water evaporates but the salt is left in the bottom of the glass. same scenario with your tank. Its actually the opposite effect on your tank.

as the water evaporates, the salinity rises and vise versa

But if you're removing water by skimming or pulling out surface skimmings then you should be checking salinity and adding salt to correct.
