Two breeding questions

I have a pair of sexy shrimp and I was thinking of trying to rescue their offspring. I am going to buy a book on the subject before trying anything but there are two questions that I want to ask real people.
1. What do you do with the babies once they are old enough to leave? Do you sell them to a LFS or someplace else?
2. For a nursery tank I have a thirty gallon that I have been planning on turning into a seahorse tank, but I decided maybe I should wait longer before getting into seahorses. Currently it is being used as a nursery for about twenty gold fish babies, though hopefully they will be gone by spring. Since it is such a big tank I was thinking maybe I should put something else in it that will be in permanent residence. It would both liven up the tank and keep it cycled in between shrimp litters. My question is: what sort of animal could I put in that does not have sexy shrimp babies in its diet?
I have been leaning (merely leaning) toward a purple condylactis, since they are the natural host for sexy shrimp in the wild (I even considered putting it into the nano tank that the parents live in, but thought it would grow to big for it).

p.s. please do not yell at me if the idea of turning the thirty gallon into a nursery for sexy shrimp is a dumb idea; it is only because I have the tank and would like to put it to use once the current occupants are moved.
 
1. You can either sell them to an LFS or to fellow hobbiest.
2. Are you talking about using the 30gal as a hatching/rearing tank or a holding tank once they are larger?
