If I have made some saltwater for a change and had it covered with a pump in it for about a week, will it have bad params? Ammonia?

Or will it be fine to use as a change?
 
Should be fine, I'd double check the salinity due to evaporation.

Long term (much more than a week) there has been people claim that the buckets they use leech phosphate into the water. I personally wouldn't worry about that though.

It wont.

In order for water to "cycle" it needs to be colonized with some form of bacteria and a nitrogen source.

Assuming you are using a clean bucket, pump and reliable water source there will be no problem.
