What are the most docile/non-aggressive fish??

Get a screen top from Home Depot. This should keep almost every fish in the tank.
Clowns can be peaceful if not kept as a pair. Keeping a pair means spawning, the natural thing with somewhat parental fish is that they defend their eggs. I would suggest a single percula or ocellaris clown for a peaceful clown.
Firefish are probably as docile as it gets IMO. Be warned that two will only work if they are a bonded pair. If not a bonded pair before being put in your tank, there is a very high chance the two will fight. Look for two at the LFS that are swimming next to each other and stick close.
Cardinals are quite peaceful as well. I would recommend them, bangaiis can only be kept in pairs though. The pairs have to be bonded for similar reasons to that of the firefish.
A flasher wrasse would be another fish that I would recommend as well. Line spot, McCosker's, and Carpenter's flasher wrasses are some of my favorites (being affordable, I don't know what your budget is). I would recommend most prawn/watchman gobies as well. The dracula, yellow, and randall's prawn/watchman gobies are fun to watch, especially when they are paired with a pistol shrimp.

Also I do not recommend egg crate for a top. Dart fish will squeeze right out of that. Def. wanna go with 1/4 inch screening.

This is a public forum. You don't get the luxury of people just talking about what you want to talk about. Jumping and no cover are a part of assessing your stocking potential. Sounds like you're going to make a top so great. Even frog fish can jump.
Stay away from the copperband.
Lots of peaceful gobies and wrasses. Check out liveaquaria for some basics of what's available, tank size, etc. Do a little more homework and then your better questions will yield better answers. Good luck.
Egg crate will not keep firefish (or fairy/flasher wrasses) in. Build a 1/4 inch mesh top.

#1 Stocking potential: I know my stocking potential is cheap currently since I have no cover, but will be making one and slowly planning out my fish stocking following setting up my quarantine tank and all the necessities.

I am also looking to make a little cover for my overflow and HOB fuge return to keep snails from blocking plumbing, what material can some of you guys suggest?

IME orchids are quite peaceful as dottybacks go. They will defend their home/hole, but, otherwise are very easy-going. For the most peaceful, get the captive-bred orchids.
If you have (or can add) a 4"+ sandbed, a jawfish is both peaceful and interesting. Yellowhead jawfish are one of the more social jaws once they are established and will hang out in the open to see what's happening.

Tail-spot or other small blennies are usually peaceful. See my avatar. The suggestions above are good just make sure that you get a mated pair if you go with two firefish, cardinals, blennies, gobies,...
Thanks for the input!....I just got myself a brand new 75g tank and I plan on transferring everything from the 55g into it. Also will be having a 40 breeder sump for it so can't wait to have the extra space to work with. Thanks for the all the suggestions...pretty pumped to get a nice array fish as I ramp up my coral stock once I get everything set up.
