what's the difference in "Microns" for filter socks?

Depends on you. The lower the number the finer the particles the filter sock will catch. Also the lower the number the faster the sock will clog up and start to overflow. I use 200 but the main purpose for me is to reduce microbubbles.
 
A micron is a unit of measurement, one million microns equals one meter.

The smaller the number, the smaller the stuff the sock will catch, and the clearer the water in tank will be. But also the quicker it will clog up.
