I just bought some Red Grape, Red Palm, and Dragon's Breath macro algae.

Will my hermits or emerald crabs eat them?

Not that I know of ; they're omnivores but only if very hungry. Its the snails i'd be more worried about specially Turbo.

Emerald Crabs will devour your ediable macro.

Emerald crabs definitely are a big no with macroalgae, as long as the hermits are smaller ones like blue leg they should be OK with the grape and palm, they may be able to snip up the dragon's tongue though.
