is there a way to fatten up the polyps? I've seen some zoas that are super massive while some on so tiny.

Oh of course... I was assuming he knew that!! LOL!
Some species are bigger than other species!

By "fatten up the polyps" I replied as it meant "to get the polyps stronger and meatier ("fat")".
The diameter of the polyps won't change much though!

Also, light and flow will some times influence the diameter and stalks' ("stems' ") length, as low light and low flow tends to make some of the species to open a bit more, and to make the stalks longer to reach the light available. But that's a different story.

Therefore, differences between "massive" and "tiny" are relative, according to the meaning of those words.

Grandis.
