2 36" sun power ATI or one 60?

Over a 6 foot tank would you suggest one 8 bulb 60 inch Sunpower ATI or two 35 Inch?

According to the specs the 60 would be enough. But then the specs aren't always the best of judgment.

I would go with the 60". It would suck to have to change 16 bulbs
