2-3gpd evaporation seems normal?

I'm used to get about 1 - 2 gpd in my similar size tank.

But my new setup 120g + 45g sump evaporates 2 or 3 (maybe more) gallon of water a day.

sounds right. My 60 + 10 does about 1.5 a day with out any fans on the sump. With fans it can get up to 2g a day.

If you're new tank has more surface area, your water will evaporate quicker. I noticed that with the cube tank I had setup vs my standard rectangular tank.

that makes sense, I didn't notice any leaks.
