My Sailfin is pretty energized and agressive. What if I put him in my 30g on the same water system for about a week and then added him back into my show tank with the new tang?

Blue is a good choice...I would look at a smaller Acanthurus species like Mimic, or Powder Brown or Powder Blue, Acanthurus are typically more "dominant" tangs, as the second addition they should even things out.
