Aqua Scaping Question

I have an Aqua Scaping question I have been wondering about for some time. I have seen several sps tank builds. When a lot of these people put the live rock in their tanks, they build island structures instead of say a long row of live rock down the middle of their tanks. I was thinking, the more rock, the more sps corals you can put in the tank. Just wondering why this is done, is it just a flow thing, so that the corals will have more flow around them or just an artistic preference?
 
Form over function I guess. A tank packed full of sps doesn't always look its best. There is beauty in the negative spaces. (I didn't say that, someone art smart did).
