For the most part probes is probes. As long as you calibrate the instrument to the probe you buy it shouldn't matter the brand.
That said, some of the weird brands have special connectors and stuff so you have to buy from them. If that's the case then you're stuck. For example, most every pH probe in the world comes with a BNC connector and they are all interchangeable. But I recently encountered a pH meter (not an aquarium product) that had the pH probe connecting with what looked like a cross between a 1/4" phone plug and a RCA connector with a hole in the middle. Weird looking plug. And the only place to get probes with the same connector was from the company that made the meter. I'd tell you what that brand was, but they've already emptied the dumpster so it's gone now.
