At what age to fish change from juvi - adult colors

I have a Desjardini sailfin and a Chevron tang that are still very much in their juvi colors. I was just wondering at about what age do they start losing those colors and mature to their adult colorations.

My sailfin is probably about a year old (got him in April when he was about 1'') and he is still very bright yellow but his spots have just really started showing on his face. That is what has me curious about when he will lose the colors he has now.

I got 3-4" Mimic tang about 3-1/2 years agao and he has yet to show any indication of changing to his adult coloration.
I guess there are certain triggers per se that dictate when and if they will change. I've had a few people tell me there is a possibilty he never will.
 
I would be fine with that especially with my Chevron as I think the juvi colors are nicer than the adult coloration.
 
Yep, I completely agree with that. There is a good size adult (chevron) at my LFS and as nice as the juvi's are I really dont care for the adult version. In my scenario, as much as I like the juvi color of my mimic I actually want the adult version. So far the little joker isnt giving any indication of change, go figure.
 
it would be an interesting poll:

How many hobbyists have seen their tang / angel / wrasse change from Juv. coloration to adult coloration while in their care.

I would bet the % of people who have witnessed this is very low, IMO
