When I look at many of the photos on RC, including many TOTM photos, it looks like the background has either been darkened or filled in with black, or maybe photoshopped to be darker. Does anyone know if it is something in camera settings or something done to these photos during editing?
 
I can't speak for all the shots you've seen and there may well have been at least some post processing manipulation in those images. I've noticed this in some of my shots. In my opinion, typically the subject is more directly under the overhead light whereas the background is out of the immediate spread of the overhead light. Thus the light being reflected off the subject is so much brighter in comparison to light reflecting off the background that the background appears substantially darker.
 
Yes, there is a setting on my canon that allows you to adjust the light intake of the camera. This makes the picture either brighter or darker. I've noticed that when you tone down the light intake the real colors don't get drowned out.
