How do you tell if they're eating if it's nocturnal and I never really see it during the day when I feed the tank?

It is a nocturnal fish, hiding while the lights are on, and swimming in the darkness in search of food. It will eat invertebrates such as worms (including fireworms), crustaceans and serpent stars.
