Neat site! If anyone gets the chance to eat lionfish take it. We shoot them off reefs and are amazing to eat, just be careful when filleting them because they will stick you even when dead.

I agree it's delicious.

Just get a scissor and cut the spines. Filet like you would any fish.

I am going to try some, I hear Whole foods will start selling them soon.

Lion fish are very tasty easy to clean (after removing the spines while wearing gloves).
