I have heard many great things about the diving in Cuba, but my country will not allow me to travel there so I can't give you any first hand experience. I'm not sure what the accommodations are like there if that is important to you.
The Caymans are great too. For serious diving, I prefer Little Cayman.

Cuba if I had that choice of the two.
As far as SPS and Coral reefs in the Caribbean, there are plenty.
Cozumel is the my favorite so far, we were going there 3 or 4 times a year. I'm staying out of Mexico for now until the drug cartel finishes their little war.
I greatly enjoyed diving in the Caymans. We spent a week there diving, there are a lot of different wild life and environments to see like micro-environments of sunken ships and cave structures to go thought.
