Cycle Question

My cycle has been going on for about 7/8 days is it possible that my Ammonia is going down already?

I have been at school since I set up my tank the first day I set it up I read .25 ammonia. After 8 days I came home and I am reading about .50 Ammonia .25 Nitrite and between 5-10 Nitrate. Correct me if I am wrong but that seems to be numbers one would see towards the end of a cycle.

Is it possible my ammonia has spiked already and my nitrite?

Whats your takes on these numbers, just curious because I do not have readings from the past 6 days.

Tank was up and running for 2.5 years broke everything down do to pests, added new rock dry rock from Reefcriters.com and new sand, after cleaning the whole tank completely. Tank is a Biocube 14

I have a feeling my cycle has yet to even start... So today I added a piece of table shrimp, when should I see ammonia from that? and how long should I leave it in there, it is sitting inside my tank in a fish net
 
Ideally the Ammonia spikes at around 10-14 days based on what method you are cycling your tank. Then AMmonia goes down to 0 while Nitrite spikes (this happens around 3rd to 4th week)

5th week you see nitrites coming to 0 while nitrates pick up ...Thats when your cycle completes and you do a WC to take care of the nitrates. If the nitrates are below 5 , no need to worry about the WC too.
