I don't think hermits molt like shrimp. When they change shells they do it VERY quickly to avoid being eaten. I could be wrong though.

Everytime I've seen a hermit molt, it looks like the front claws and legs, with a small bit of meat on the opposite end. Looks just like a molt to me. I leave them in the tank, they get pushed around until one of my larger rock flower or bubble tip anemones eat them. Weird I know, but the nems seem to love them.

Yes hermit molt, mine do every couple months. You need to buy some empty shells and put them in your tank. Hermits molt because they are growing and they will need larger shells over time.
Although I had a hermit die (You could tell because it has a sizeable body on the end) and it got displaced from its shell by another hermit. Or murdered by it, one or the other.
After a couple of minutes of getting picked over, what was left looked like a molt too. They ate the body, left the 'legs' attached to the front bits.
