Make a spreadsheet with 2 columns. Put the dates in the first column and the associated nitrogen level in the second column.
When you have enough entries, highlight the data then select Insert from the top menu, then select line to create a line chart. If you want to track ammonia and nitrites as well, just add additional columns.
