Eddie...I was salivating at the thought of pigs in a blanket but I was not planning on bringing them. You go right ahead.

Incidentally...I'm not sure if Nathan will be with me. It depends on the weather. He's buying a motorcycle Thursday, so if the weather is nice, I would expect him to be either on the motorcycle or at the park on his BMX bike. That boy loves anything on two wheels and sunny, warmer days are hard to come by right now.
 
Oh and I have been given the almighty cheese dip recipe...so the tradition has been passed down and Chase's faithful followers will no longer have to fear the loss of their cherished cheese dip.
 
The website has been updated with directions. I did not post Don's number with them, so PM him if you need it or get lost or somethin'. Or call me if you have mine.

I don't usually get lost going to Don's house. I ALWAYS get lost going to and from Dave's though. Thank goodness for my GPS phone...oh man...technology is a beautiful thing.

50/50 for me depending on weather. Gotta replace some shingles that blew off today, seed the pasture, redo some fencing, work on a car, possibly meet with a contractor, etc. Sunday's lookin' like the wet day of the w/e now.

I'm kinda blending ceviche recipes because none of them give the variaty like my sister's does. They are mostly one kind of seafood recipes so I guess this is not a traditional Ceviche.

So here's what I'll be mixing up: (probably not enough to last till Mel shows up but it should be good)
about 1/3 lb Swordfish
about 1/3 lb Cobia
about 1/3 lb Amberjack
about 2/3 lb shrimp (I'll probably add another lb to stretch it)
about 1/3 lb calamari rings
then
3-4 Scallions (green onions)(green part only)
2 medium to hot peppers (roasted)
1 yellow pepper (roasted)
1 red pepper (roasted)
2 cucumbers
1 red onion
2 avocados
4 lemons (juice of)
2 limes (juice of)
premium EV olive oil
cilantro/vinegar based salsa
minced garlic
fresh cilantro

I've never made it before so we'll see how it turns out...

All except lemon/lime will be mixed Friday and lemon/lime will be added Saturday AM. The reviews I've read for other ceviche always said it was better the next day.
 
Ceviche is cooked...it's just chemically cooked. So it's not quite sushi...more like a Mexican shrimp cocktail.
 
Looking forward to returning to the club. We are heading to Atlanta on Sat. to do somethings including the aquarium so Mel had better show up on time or she will just have to do another talk at a different meeting.
 
Sounds like it is going to be a good meeting, but I am going to have to skip it. I just found out a good friend of mine died of a heart attack last night and the services are tomorrow. He was a faithful man of God and I have no doubt he is experiencing the true meaning of Joy at this moment, but he will be missed by those of us left behind (for now).

Somebody please take notes for me so I can update the website with the meeting notes and any new members that may join. Thanks.

Wow, 2 hrs of washing, cleaning and chopping up stuff. I dont think we'll run out of ceviche very soon. I have a cake pan (plastic) full of it!

It's "cooked" by the acid of the lemons. I just wish I knew how long to let it cook for. opinions range from an hour to overnight. I think I'll add 2 lemons now and drain before going to bed. Then I'll check it in the AM to see if it needs more "cooking" time.
