I have two Blue Star Leopard Wrasses (bought 3, 1 died second day). They have been in the tank about 3 months.

Will one eventually turn female? Or, should I get a third? Male of female?

they dont revert back from male, they start as female and change to male if there isnt another dominate male present

Male Leopards look completely different from females. It's really doubtful you have two males because 1) males aren't as commonly available as females and 2) multiple males in the same tank don't tolerate each other.

If you have two females, there's a good chance that one will turn male, just keep them fat and happy.

Oops, didn't check what I wrote. I have two FEMALES.

I have not found gender change to be inevitable, even with just females. I've eight females (of differing species), some over 5 years old and no signs of gender change in any of them. I do have two meleagris in my refugium and one of them turned male.

I put 3 female in my tank a week later one of them changed to male and one of the 3 disappear after 3 months after I return it to the DT ( somehow made down to the sump )
