Jawfish definitely have a lot of personality and take great interest in their surroundings. Though from my experience I would put Perly jawfish on the bottom of the pile.
I found the Chinstrap jawfish to have the most personality of all jawfish. On top of that it is also the most suitable for a reef tank as they are not very jumpy and get along with less substrate. In many ways they seem to be an in between of the smaller Marine Bettas and your typical jawfish.
Second on the jawfish hierarchy would be the Blue Spotted Jawfish, but they are better kept in a species tank than in a reef tank.
Other fish with lots of personality would be Marine Bettas, Angelfish, Anemonefish, Damselfish, many Gobies,... The list is pretty much endless.
The fish with easily the most personality are Puffer and Triggerfish due to their relatively high intelligence. This is especially the case with the predatory non-reef-safe species.
