I read in a few spots that the mantle shouldn't flap from the current. Do they need to be in a spot where the mantle doesn't get moved at all? Seems like that would be hard to find in a reef tank.

Level of water current depends on the clam species. Personally I have better luck with medium to mild water flow for my clams and they are fine with that. You'll know if the water current is too strong is when the clam will start to "spin" and turn away.
 
some mantle movement is fine, you just dont want it "flapping in the breeze". these clams all can be found in the high current reef zones
