Hi I have a magnificent foxface which I'm having issues with getting him to eat anything but algae sheets. I bought herbivore pellets for him but when I wanna give him some he hides. Anyone have any tricks?

Is he new ? My fox face is a tottal pig and will devour anything in the tank .
Try some nls pellets my fox goes bonkers for them if kept dropping them in I think he'd eat till he exploded

3 weeks is still a little soon to get frustrated. They can be shy fish at the beginning. I wouldn't worry about him, if he is eating Nori. Maybe try and go 5-6 days without the Nori and just feed the tank NLS pellets and Flakes and see how he responds. Also when you feed put the food in and move away from the tank, go hide around the corner or something, but still be able to see him eat.

Dip your frozen food in garlic/selcon. Usually works.
If you want him to eat flakes then I usually put some water in a plastic cup, a few drops of selcon and hold some flakes in with feeding tongs for about 30 seconds before putting them in my tank (don't pour the water in the tank). You can also use your fingers or a tea strainer of some-sort if you don't have feeding tongs.

Live blackworms will get most fish eating. If that doesn't do it, then nothing will. Seriously.

I try to have live blackworms on hand whenever I get a new fish. Of course, I try to have live blackworms on hand whenever possible. They're just good food for the fish.
