Does anyone know if a plastic gas can is safe to use as an ato reservoir?

I would not. Get something marked food grade.

That is my goal but a 5 gallon gas can fits where I need it to be. I transported water in them for years without issue but never used one for long term storage.

Would a 5 gallon bucket fit your location? I use the orange home depot bucket to store a little extra RO/DI water and I've never had an issue with them

Unfortunately no. The gas can is longer and thinner.

They are typically just (HDPE) Polyethylene (look on the bottom for the #2 triangle symbol).. same material as the "typical" white/translucent 5 Gallon jugs used for RO/saltwater storage from your local fish store,etc...
It should be just fine.
And it may or may not contain additives that may or may not be a problem.

I would use it if I couldn't find anything else.

Go to Lowe's paint dept, get a polystyrene bucket [white, not grey]. Another source would be a professional restaurant supply. Food-safe mean reef-safe pretty reliably as long as it's plastic. And some foodgrade containers might be the same narrow shape as a gas can.

I used two 5 gallon gas cans back when I was buying my water from the LFS. Never had any issues from them.

Wally World sells six gallon "jerry" cans for water handling. Comes with pour spout, spigot and vent hole gor 'bout twelve bucks. I use two to rotate through my kalk/ATO supply. Nice handle, easy to move around.
