Help me stop killing new fish!

That isn't a high salinity whatsoever. During your acclimation process, you are dripping or "glopping" tank water into the bag or bucket with your new fish, correct?? You aren't just floating the bag for temperature like you would with a freshwater fish???

Another thing with purchasing fish, I've begun to demand that the local fish stores label their fish with the price and the DATE when they arrived at the store... don't buy a fish right out of the ocean, let the store take the loss. Many stores routinely expect 10-30% mortality on all shipments, and factor this into the price...

Actually this is very true. Wait a few days after the fish arrives at the store . Even a week. Pay for it first and make them hold it. If it does then they need to order a new one . Even though I'm guilty of it also. If you can't wait then take it strait when it arrives to your tank so that it doesn't go in the store tank at all. One less acclimation in a couple day down can help tremendously .
 
Well it look's like you solved your problem, but just as a side note. My fish used to always die and I had no reason why after checking all the things other people said here...until someone mentioned checking if there was current going through my tank. I used my multimeter and sure enough it turns out my heater was leaking voltage into the tank and stressing my fish until they died. I got a grounding probe and a new heater and that solved the problem.
