Importance of Height

How important is water column height in regards to something like a yellow tang? I'm thinking of a tank 72"x20"x18" (height).

Also in general how important is height in aquascaping?

Your total volumen is more important. And the lenght of 72 is cool.

The suitability is gonna vary in relation to what lives there.

My tank is 5'x2'x20" and I have a mature yellow tank and a young scopas tang and they are both doing well. I think you'll be OK.
 
For tangs and nearly all fish tank length with clear swimming lanes are important, vertical height is not as long as there is still enough height to freely swim. In your case the 18" is fine for fish. Your corals may eventually reach the surface depending on the coral, but you can either cut them back when they do or allow them to branch out at the water's surface when they do.
