Years ago I saw a tank in Disney's Epcot Center that was filled with hundreds of 2"-4" snook. They looked almost exactly the way they do when fully grown.
A few years back, a guy up on LI proposed doing grow out of wild collected swordfish. He had a good waterfront location in Greenport and started a business building captains chairs under contract to the CG in order to fund the aquaculture. Never got the aquaculture off the ground. But it would have been cool.

That growth rate is the main reason that fishery has been sustainable. If it wasn't for the food bill to support that growth, they would be an ideal aquaculture fish.
