Looking for a good wedding spot - Caribbean/Mexico

My fiance (still have to get used to calling her that!) and I are starting to plan our wedding and we decided we'd like to do it somewhere warm and sunny! We'd prefer to have it at an all-inclusive resort where our guests can relax and enjoy themselves. We're looking at Caribbean or Mexico at the moment.

Does anybody have some suggestions on places for us to check out? We'd really prefer to find a place that has nice, calm sandy beaches but easy access to snorkelling. That should appease all of our family members.

We recently took a trip to St John (USVI) and something like that might be perfect, if it wasn't so expensive...

Congrads, My fiance and I are getting married in Turks and Caicos in May. I have heard nothing but good things about the islands from many different people. We are working with Nila Destinations to coordinate everything. There are tons of great hotels/resorts down there and I am sure you could find something that fits your needs.
TCI was just voted one of the top beaches in the world I believe. There are great coral reefs all over the islands and some are even accessable from the beach.
